Panko Crusted Salmon Bowl

Ingredients:
2 salmon filets
1/2 cup Panko Crumbs
1 egg
Jasmine Rice (or grain of choice)
olive oil for pan
2 tbsp low sodium soy sauce
1 tbsp rice vinegar
1tsp sesame oil
10g Honey
sesame seeds for topping
green onions for topping
avocado
pickled cucumbers
veggies of choice
Instructions:
1. Place olive oil in pan on medium high heat
2. Cut salmon into bites, wash in egg, coat in panko, and place into pan to cook for about 2min each side
3. Take out salmon bites and place on paper towel to soak up extra oil
4. place soy sauce, rice vinegar, sesame oil, and honey in a bowl and stir
5. Place about 6oz salmon (panko will make it weigh more so rough guess is 6oz and track as 5oz) over a bed of rice (macros account for 3/4cup jasmine)
6. Add 1/2 of soy sauce mixture over salmon bites
7. Finish the bowl off with 20g avocado and pickled cucumbers
