Ingredients:
Chicken Breast -1 lb
1/2 cup Buffalo Sauce
Ranch Seasoning Packet
1 can Black Beans
Light Sour Cream
Mexican Blend Shredded Cheese
25g Avocado
Rice of Choice (macros are Vigo Yellow Rice)
Instructions:
Place Chicken, Buffalo Sauce, Ranch Packet, and drained black beans in the instant pot and cook on high for 16min (or crockpot for 5-6hrs)
Shred chicken
Weigh out 100g yellow rice (or 3/4 cup)
Add 5.5oz chicken to bowl
top with 1fl oz sour cream, 25g avocado, and a spoonful or two of the black beans
