Mexican Bowl




Ingredients:

  • Chicken Breast -1 lb

  • 1/2 cup Buffalo Sauce

  • Ranch Seasoning Packet

  • 1 can Black Beans

  • Light Sour Cream

  • Mexican Blend Shredded Cheese

  • 25g Avocado

  • Rice of Choice (macros are Vigo Yellow Rice)


Instructions:

  1. Place Chicken, Buffalo Sauce, Ranch Packet, and drained black beans in the instant pot and cook on high for 16min (or crockpot for 5-6hrs)

  2. Shred chicken

  3. Weigh out 100g yellow rice (or 3/4 cup)

  4. Add 5.5oz chicken to bowl

  5. top with 1fl oz sour cream, 25g avocado, and a spoonful or two of the black beans
